The charcoal reacts with oxygen from the air in a hot red esplendente, forming colorless gas carbon monoxide, which then burns with a blue flame with more oxygen from the air to produce carbon dioxide gas. Because of the heat released by both reactions, charcoal reaches a red esplendente and radiates heat energy, and the hot gas or carbon dioxide leaves the area of combustion, releasing, with good luck by convection, most of its heat through contact direct physical with the cooking pot. The gas temperature fell to the extent that transfers heat and disperses in the fourth. With charcoal generally not used duct, since its combustion is relatively odourless and without smoke, when compared with that of wood or coal. Burning charcoal can be released unburned gas carbon monoxide, which is very poisonous and it is essential ventilate rooms where charcoal is lit.

The fact that charcoal can burn in a hornalla compact and portable, without the need for a conduit, is one of their most important and explains his broad popularity, especially in urban areas and built. A-Cm when, in terms of global energy is more efficient for a country trying to use the same wood for cooking with efficient combustion, instead of turning it into charcoal before, it would be a policy difficult to implement, since most people who currently burning charcoal, hardly changed by the wood. A cooker with fireplace consuming wood is expensive. The oven can be of rammed earth and does not cost anything, but a metal tube can cost U.S. $ 10 or more. For those living in congested urban housing, it might be impossible to install fireplaces, and in these cases imposing the characteristics of charcoal from being a non-polluting fuel.
